Catherine's Carrot CakeCatherine's Carrot Cake 2 cups flour
2 tspn baking soda
1 tspn salt
1 tspn mixed spice
1 tspn cinnamon
4 eggs
3/4 cup ++ 2 Tblspn brown sugar
1 1/3rd cup white sugar
1 1/2 cups canola oil (I tried Olive oil and it was AWFUL)
4 carrots grated
1/2 cup walnut pieces (I've also used hazelnuts)
135gms pineapple pieces - well drained
