Catherine's Carrot Cake

Ingredients
  • 2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 4 eggs
  • 3/4 cup + 2 Tbsp brown sugar
  • 1 1/3rd cup white sugar
  • 1 1/2 cups canola oil (I tried Olive oil and it was AWFUL)
  • 4 carrots grated
  • 1/2 cup walnut pieces (I've also used hazelnuts)
  • 135gms pineapple pieces - well drained
Steps
  • Throw all in together mixing well
  • Bake at 150 degrees for an 1 1/2 hrs - 2 hrs
  • Ice with cream cheese icing or dust with icing sugar
